I love a good soup, especially on a chilly day. One of the easiest soups to make is a veggie soup like this where you can just put everything in the pot and simmer until it is ready. It’s such a great way to have a variety of vegetables in one meal. I like adding some soup mix, which is a mixture or beans/legumes and lentils, to give it some extra texture as well as some protein and carbohydrates to make the meal more filling and complete. Below is the recipe for this soup; however, I am all about making a recipe your own, so feel free to change it up. Add or use different vegetables and make different combinations. That’s the best thing about veggie soups, the variations are endless!
Ingredients:
- 1 Onion
- 1 Cauliflower
- 3 Carrots
- 3 Tomatoes
- 3 Parsnips
- 1C Soup mix
- ~2L Water or stock
- Salt and pepper to taste, if desired
Method:
- Soak soup mix in water until ready to use
- Place water in a large pot and bring to the boil
- Meanwhile, wash and chop the vegetables to desired sizes
- Add vegetables into the pot
- Drain and add soup mix to the put
- Allow the pot to reach boiling point before letting it simmer for about an hour
- Season with salt and pepper if desired
The great thing about soup is how easy it is to freeze for another time. So don’t worry about making a big batch, it just means you already have another meal for later if you don’t finish it.
